The Problem
A meat processing plant was shut down for the third time by the USDA (United States Department of Agriculture) as a result of listeria moncytogenes. After compliance officers pulled samples of the product from the plant and at distribution centers, they instituted a recall.
The Solution
Plant management decided the best solution was to replace their national sanitation supplier with All American Chemical. After breaking down every piece of equipment to the base--including Raw, Cooked and Ready to Eat (RTE) departments--our microbiologists were able to locate the "hot spots." We then instituted a comprehensive sanitation program, complete with new written procedures, training and new equipment to apply the detergents and sanitizers.
The Results
From a facility that had an Aerobic Plate Count (APC) in the millions, it was reduced to insignificant levels. And there was no more listeria in their process. The product was now defect-free, consistent, completely safe, and could sustain a long shelf life.
