All American

Case History #3

The Problem
A beverage company that manufactures carbonated and nitrogen-filled products had cans that were spontaneously swelling to the point of seam failure in the warehouse. It was strongly suspected that this was the result of yeast.

The Solution
Working with both the beverage company and its co-packer, All American Chemical tested the finished products and our assumption proved correct: There was a very high load of yeast. We began our investigation by dismantling all of the equipment in the entire beverage handling system, from the compounding area to the filler, including sanitary pipes, gaskets, pumps, and even the can seamers. By process of elimination, we were able to identify the batch area as the source of the contaminated syrup with the high yeast count. We then implemented new training methods and new procedures, including routine (not sporadic) breakdown of equipment.

The Results
The product returned to stability and a normal shelf life--no evidence of yeast was found and code dates were successfully maintained.
