The Problem
A frozen food manufacturer had numerous "product holds" involving liquid egg and milk--Total PLate Count(TPC) was always excessively high. This necessitated the costly destruction of a tremendous amount of product.
The Solution
Competing with large international chemical & sanitation firms, All American Chemical was chosen to solve the problem. After we performed a thorough breakdown and inspection, we located numerous "dead legs" that were the sources of bacteria build-up. We also found puddling in the batch tanks. We instituted a comprehensive, new sanitation program, including new training and procedures. The final phase was to bring in engineers to reconfigure the production line.
The Results
Product holds were completely eliminated, saving literally millions of dollars. The frozen food manufacturer's other plant and its' co-packers were also re-enginered. And All American's sanitation program became standard operating practice.
