The Problem
An international meat processor had intermittent product spoilage and evidence of listeria moncytogenes. At both the company's own warehouse and its distributor's, the multi-vac product had a milky white appearance and was "gassing" in its packaging. This put their multimillion dollar fast-food account in serious jeopardy.
The Solution
All American Chemical was assigned to replace the international chemical supplier that had been responsible for product safety and sanitation. We audited their facility, focusing on their Ready To Eat(RTE) department. After dismantling the equipment in their RTE and Raw departments, we found unusually high levels of lactobacillus and listeria moncytogenes. Additionally, listeria was actually discovered underneath equipment faceplates. It was clear they had not been breaking down their equipment properly, but that was really part of a much bigger problem. One that required us to institute comprehensive, new sanitation, safety and liseria control programs. We also incorporated the proper equipment for more thorough cleaning and less chemical consumption, including Clean On Place (COP) tanks and Clean In Place (CIP) equipment.
The Results
We restored stability to the plant by eliminating the spoilage and listeria
that threatened its anchor fast-food account.
